The Ollada Catalan (pronounced “Ouillade”) is a fairly hearty winter dish. This is pork and vegetables (cabbage, white beans, potatoes, etc.) of the hotpot type.
The day before, place your white beans in a bowl with water to make them swell.
In a large pot, put the meat and the rind, salt and pepper (a few small onions if you have any). Cook for 3 hours.
In a saucepan, put the beans in water with garlic, thyme and bay leaf then bring to the boil.
Clean the cabbage, cut it into strips.
Peel the potatoes, peel the onion, cut it into 4.
After the meat has been cooked for 3 hours, add the vegetables.
During this time, if you are making your own sausages, mix the sausage meat with the whole egg and the parsley, make 2 to 3 sausages with this stuffing and roll them in flour.
Brown them in a pan. Serve at the same time, all hot. ¡
